In February 2025, Brandi Lott opened the doors to Fraiche Café in Laurel, Mississippi, bringing a fresh, vibrant approach to Mediterranean-inspired cuisine. What began as a dream shared by friends craving healthy, flavorful meals quickly grew into a reality guided by faith, hard work and a commitment to quality. Brandi, owner and chef, recalls how the idea took root: “Friends loved Mediterranean food but also wanted clean, healthy options. Eating out was a necessity with busy schedules, yet Laurel had few options. They begged for this restaurant for a while!”
Initially hesitant, Brandi prayed for guidance, unsure if it was the right time. When the perfect space became available, she finally felt the green light. With her husband by her side, she took the leap. With a small kitchen and a big vision, Brandi focused on simplicity without sacrificing flavor. Every menu item is a nod to the café’s name, Fraiche—fresh, exciting and thoughtfully prepared. Brandi personally shops daily to ensure top-quality ingredients and crafts all of the café’s coffee, roasting the beans herself and creating unique flavors to complement the menu.
Brandi’s culinary journey has been shaped by experiences beyond Laurel. In 2018, she had the privilege of working for Chef Thomas Keller in New York City, where staff meals, prepared by different teams each day, celebrated diverse family traditions and cultural fusions. “The flavors, experiences, and memories were unforgettable. My skills were sharpened, and my palate was broadened,” she reflects. “I hope this is reflected in every dish served at Fraiche Café.”
Running a small space comes with challenges, but Brandi and her team prioritize efficiency and quality. Prep begins early each morning so the café can serve customers swiftly without compromising the dining experience. The open kitchen allows patrons to witness the care and precision that goes into every dish, reinforcing the café’s commitment to transparency and craftsmanship.
Fraiche Café prides itself on more than just food; customer service and the overall dining experience are at the heart of the café. Fresh, flavorful and healthy options abound with a diverse menu designed to appeal to a wide range of tastes.
